Versatile Summer Squash Recipe

Are you looking for a new way to serve summer squash? My favorite versatile summer squash recipe is a must have in your recipe collection.

You know it is coming… The mounds of zucchini and crookneck squash. Everyone has plenty; so ready or not here it comes in small grocery bags left on your doorstep and front seats of unlocked cars in church parking lots everywhere. Prepare yourself and tell them to Bring it on!

My recipe contains fresh sliced zucchini and crookneck squash and a little fresh tomato. 

Summer Squash Medley

1 tsp olive oil

1 tsp minced garlic

1 small zucchini squash, sliced

1 small crookneck squash, sliced

1 tomato sliced

In a large fry pan heat the olive oil until hot. Add garlic and cook until the aroma is released. Add squash pieces and saute’ until firm. Add tomato and heat through.  If desired top with a dash of salt and pepper.


The versatility of this simple stir fry is phenomenal. Look at all the flavors that can be made from one pan.

Italian= add fresh basil or oregano

Mexican= add diced chilies or chipotle

Thai=add fish sauce and bean sprouts

 Indian= add curry and coconut

As you can see the list is endless. I have actually added cubed pork, onion and cotija cheese to this saute’ and made it into Zucchini Con Queso.  It is a perfect Taco/ Tostada  filling or load it onto chips for a flavorful nacho.

Many of the best recipes are made with a short list of simple ingredients. Some of my favorites only have a couple of ingredients. 

My versatile summer squash recipe is a perfect for family gatherings too. Bring it to your next potluck. Take it camping. It cooks great in a dutch oven too.
