Turkey Avocado Bacon Taco

Roasted Turkey, Bacon, Avocado and a creamy chipotle sauce. My way of enjoying all the flavors of leftover turkey sandwich without the bread. Tortillas are easy to use. Use a flour tortilla and it is an instant flavorful wrap.

Earlier this week  I realized I had a turkey in the freezer for over a year. Yikes! I shouldn’t have let that go that long.  I really hoped while I was defrosting it that it was not freezer burnt. Good news! It was fine. 

So as you are planning out your meals for the next 90 days this one has got to be one of them. Use up those turkey leftovers but your family will love it cause it looks like a taco.

Taco Tuesday has been a worthy commitment for me over the past 10 months. I am closing to the end of the year and will have many delicious recipes to compile into an E Book. I think that will be a great way to enjoy all the Taco Tuesday Recipes in one place.   Do you love E Books? I do now that I have a Smart TV. I just store everything in the cloud and then bring them up to make in my kitchen. It’s so easy.  I am a little messy when  I cook to having a tablet in my kitchen was really a  risk of getting it messed up. The online way is mucho bueno for me.

  1. 2 cups sliced roasted turkey
  2. 1 avocado sliced
  3. 1/2 lb bacon chunks
  4. 1/2 cup sour cream
  5. 1 tsp chipolte in adobo sauce
  6. 1/4 cup shredded Mexican Cheese
  7. 2-3 sliced radishes
  1. Place turkey, bacon and avocado into a medium bowl to combine.
  2. In a small bowl combine sour cream with chipotle and stir until creamy and smooth.
  3. For additional heat add 2 tsp pepper.
  4. Enjoy on flour or corn tortillas.
  5. Add cheese as a garnish with the sliced radishes.
