Pumpkin Ginger Spice Donut Holes capture the essence of fall in two tasty bites.  Believe me when I say that you will not be able to stop with just two bites.  The crispy cinnamon sugar spice coats your lips as you bite into each hole.  Just when you are about the wipe it off the tender pumpkin filling will make you stop short and savor the flavors that are popping in your mouth.  The intense flavors will have you eating many more than just one or two .The batch makes about 20 1 inch holes but you may need to make a double batch.  Small portions are not an option.  You might as well plan for it.

I saw a similar recipe about a year ago while perusing through a magazine at my mother’s house.  I copied down the basics but realistically I had better ideas to enhance the flavor of this recipe.  I knew it would be a huge it at my house. My hubby loves anything pumpkin.  The Pumpkin Ginger Spice Donut Holes could have convinced him to buy me a new car…. They are that good.  I am not a huge fan of pumpkin or fried doughnuts but these tender morsels had me fighting my hubby for the last one. Rock, Paper Scissors anyone?

This may be the new recipe that you will want to serve them. They are easy for the smallest hands to eat.  Serve them up with some hot chocolate or spiced apple cider. Ingredients
  1. 2 cups flour
  2. 2 tsp baking powder
  3. 1/2 tsp salt
  4. 1/8 tsp nutmeg
  5. 1/2 tsp ginger
  6. 1/8 tsp ground cloves
  7. 1 tsp cinnamon
  8. 1 egg
  9. 1 tablespoon molasses
  10. 1/3 cup sugar
  11. 1/3 cup almond milk
  12. 1/2 cup pureed pumpkin
  13. 1/3 cup apple cider
  14. 2 tablespoons melted coconut oil
  15. 4 cups vegetable oil for frying
  16. Cinnamon Spiced Sugar
  17. 1/2 cup sugar
  18. 1 tsp cinnamon
  19. 1/8 tsp nutmeg
  20. 1/8 tsp ginger
  21. 1/8 tsp cloves
Instructions
  1. Mix flour, dry ingredients and spices together in a large bowl. In a small bowl whisk egg, sugar, molasses until creamy. Add to dry ingredients. Add milk, cider and coconut oil. Stir together until smooth. Set aside for 30 minutes.
  2. Heat vegetable oil in a shallow dutch oven to 350 -375 degrees. Using a small teaspoon drop rounded spoonfuls into the hot oil and fry to a golden brown.
  3. Drain on a paper towel lined plate.
  4. Mix together cinnamon sugar mixture in a large plastic baggie. Place each donut hole into the bag and shake gently to cover each hole.
Notes
  1. Make sure your spoonfuls are not larger than about 1 inch in diameter. If they are larger the donuts will be doughy and not cooked thoroughly.
