Pistachio Peach Pie Pops

 So excited to be participating with the #Foodie Extravaganza again this month.  You gotta check out all the great recipes that use peaches. 

My backyard peach tree is loaded. The fruit is starting to ripen and now my fight with the birds begin.  I go through this dilemma every year.  Should I pick the peaches a little green and sacrifice that tree ripened flavor or wait and deal with the birds taking their share of the fruit?  This year I picked a little early.

Peaches are one of my favorite fruits.  There is nothing better than a freshly baked peach pie.  Today I decide to make my peach pie portable. How about a yummy Pistachio Peach filling surrounded by flaky crust and stuck atop a stick?  Sounds good, Huh!

This is what you will need to make your own:

1 large peach

3 tablespoons brown or raw sugar

1/4 cup crushed pistachios

1 prepared store bought pie crust roll

1 dozen 3 inch sucker sticks

Step One

Shell and crush pistachios in a small thick bag with a mallet.

Step Two

Cut the peach into small pieces. Place into a bowl. Add sugar and pistachios.

Step Three

Roll pie crust and cut round circles with a small cookie cutter.

Step Four

Spread waxed paper on baking sheet. Place 1/2 tsp of drained filling onto pie crust circle. Top with sucker stick. Add additional pie crust circle.  Seal by crimping with a small fork. Apply egg wash. Sprinkle with crushed pistachios.  Bake for 9-10 minutes at 400 degrees. Watch the edges to prevent burning.   Cool on a wire rack before serving.

    First, I have to say that I am totally jealous that you have a backyard peach treat!

    And then I have to say that I am in LOVE with this recipe! They are super adorable … and they sound so delicious I don’t think I could be left alone with them … as I would eat them all!

    And I am shocked at how easy they are to make! Kudos all around!

      I love your cute comments. Yea the peaches are almost ripe. Still trying to decide to pick them slightly green to keep the birds from getting them. Hate to sacrifice the yummy fresh tree ripened flavor just to get some.

    By no means am I a warm peach eater or a pistachio lover, but when I heard you were making these I got super excited! They’re so adorable and sound amazing. I might just have to whip these up for the fam and try one 🙂
