One Pan Zucchini Chicken Pasta

One Pan Zucchini Chicken pasta is my way of using zucchini out of my garden.  The other day I went out to pull weeds and discovered a zucchini the size of a small boat.  Seriously, they can grow 6 inches overnight.  Are you feeling zucchini overwhelmed too?  Well I have been trying to use them while they are young and tender but … miss a day and you are toast.

I missed picking the squash for only 2 days. They grow sooo fast.

The other day I was out walking in my neighborhood when I passed a small table loaded with zucchini and a sign that said, “Free Veggies”.  People even resort to door bell ditching unsuspecting neighbors just to get a little relief from the guilt of throwing away good veggies.

This is what I have decided to do.  I am going to prepare as many dishes as I can before my family cannot eat another bite of zucchini.  It will be a while because we love them.

Zucchini Medallions are a delicious way to enjoy them when they are small.  I prefer to dip them in a home made French Fry Sauce.

Zucchini Con Queso Tostadas

Another favorite recipe is Zucchini Con Queso Tostadas. Easy tostada filling combines pork, zucchini, tomato and onion with cotija Mexican cheese. 

I usually peel and seed the big seed out when I shred it by bulk for Zucchini Cookies. I freeze it in 2 cup portions for easy baking.

I am not going to admit that I actually used zucchini to make and can Pineapple Spears.    I did many years ago and I was too afraid to open the jars to test them out. I stored and waited a few years until they turned dark and then threw them out. I also made Zucchini Strawberry Jam and gave away a cute ceramic jam jar with it.  I gave these to my family, they still speak to me so they were either thrown away or it was good. I am not in the near future try these recipes again.  I am a little frightened about the Pineapple Spears to this day more than 20 years later.  So make zucchini dishes that you can actually use and will want to eat.  Trust me, it is the best!

Ingredients
  1. 2 tablespoons olive oil
  2. 2 chicken breasts, cut into cubes
  3. 1 small zucchini
  4. 1/2 cup sliced cabbage
  5. 1/2 bell pepper, diced
  6. 1/2 onion, diced
  7. 2-3 garlic cloves
  8. 2 tsp dried Italian spices
  9. 1 can diced tomatoes, drained and rinsed
  10. 2 cups whole stewed tomatoes, partial drained
  11. 1 tsp chicken bouillon
  12. 1/4 cup Parmesan cheese
  13. 1/2 lb rotini pasta, cooked al dente
Instructions
  1. Heat large heavy skillet with olive oil, add chicken, vegetables, garlic and tomatoes. Cook until vegetables are almost soft. Add spices,and bouillon. Simmer on medium until the chicken and vegetables are done. Add cheese and serve over cooked rotini pasta.
Notes
  1. Substitute pork, beef, shrimp or fish as a substitute for the chicken. This dish would be great with more veggies such as cauliflower, broccoli, crook neck squash, carrots, celery etc and make it a meatless meal too.
