Mexican Fiesta is one of my Christmas traditions. This is a photo collage of all my favorite dishes we served at our Annual Mexican Fiesta.  I host a party at my house during the holidays for neighbors and friends. It is so fun to get together, learn more about new neighbors and mingle with long time friends. I usually have between 15-35 people attend so you know I am cooking for a couple of days to get all the dishes prepared.

This year I took a suggestion from my sister-in-law and just made more of a few dishes. Last year I got a little carried away and had an entire buffet spread from Mexico and China. Everyone got their fill but I was not left with pans full of anything.

My new neighbor across the street brought a Brazilian  chocolate bon bon that was a huge hit.  They were so gorgeous to look at that you hardly wanted to ruin the beauty of biting into it. It is pictured at the top cut open.

The photo spread of my favorites include:
Shrimp Ceviche on Crispy tostada shells
Tamales with Chile Verde Sauce
Refried Beans
Corn Dip with Chips
Spanish Rice
And the spread of condiments for fajitas.  I love to see the guest pile on their favorite toppings and then complain that they can’t fold the tortilla around all the fillings.  This is joy and happiness to me! My husband gets into the production by getting all the right tables brought in, cleaning the bathroom and making sure the floors are clean after I spill cheese, cilantro, powdered sugar and who knows what else while I am cooking many times over. 

It may seem like a lot of work but paper, glue and scissors are more frightening to me than creating a huge pot of tamales.  The Fiesta is my way of getting out of doing the “cute-themed neighbor gifts”.  Which makes me happy, my neighbors happy and my hubby likes the leftovers (when there are any).
