Thanksgiving Dinner is all over and I end up with a huge pile of turkey. Ready to go into bags for later consumption. Sometimes we have consumed so much food that all I want to eat is soup for the next few days.

I love to make home made soup stock. It is the best way to use the roasted turkey carcass after Thanksgiving.  You don’t really need to throw it away. It is still really good. Just in a different form. 

This is what I do—-

I put the turkey carcass in a big pot of water.  Use 1 whole onion, cut in 1/4 with the skins on,  a couple of ribs of celery and chunks of bell pepper. Just cut them up loosely and toss them into the pot with the bones.  Add a little salt and pepper and boil until the meat comes off the bones.  It will take a few hours so be patient.

After a couple of hours— strain the bones and vegetables from the juice.  This solution is the stock.  It will be a little fatty so chill the stock in the pot overnight and skim the layer of fat off from the top of the stock.  At this point you can use it for soup and everywhere you used chicken stock.

Often I will can the stock for later use with my pressure canner or freeze it. Both ways are great ways to use the leftover turkey carcass.

  So when Thanksgiving Day rolls around and you have enjoyed the big bird think of one more recipe for those leftovers.  Make Soup Stock from the Carcass. It’s a great thing to after the big black Friday Shopping excursion. If you just can’t find the time. Put the carcass in a large freezer bag and do it on one of those cold snowy days when you just don’t want to leave the house. 

It is the meal that extends to many, many more.
