Cuban Inspired Quesadilla

Cuban Inspired Quesadilla has so much flavor that you will adore this addition  to the #Foodie Extravaganza Round Up. This month’s flavor is Pickles.  I think my Cuban Inspired Quesadilla is a perfect fit. You will be freakin’ blown away by the flavors!

A few years ago I traveled to a little town on the southern coast of Florida.   I was running errands for the event I was working at.  It was about lunch time and I found this little place by the side of the highway that served Cuban Sandwiches. I had always heard how delicious they were. I ordered one and waited with anticipation for them to make mine.  Wrapped in wax paper it was warm, a little drippy and had layers of ham, marinated pork, cheese, dill pickles and mustard. I could not believe all these flavors could taste so good together. I am telling  you that it was amazing! I had ordered a large sandwich (some for lunch now, some for dinner, later) It was so good I ate the whole thing.  So much for dinner….

Lately the sandwich as been on my mind.  I had some leftover ham from our family party so why not make the sandwich for my family to try.   Didn’t have any good bread so I thought why not put it between two homestyle flour tortillas.  It was pretty brilliant if you ask me!

I used a Mojo style sauce with the pork meat and pressure cooked it until it was tender.  Everything else was just a matter of assembly. 

Cuban Inspired Quesadilla

Start with a generous smattering of mustard ( I created a really fun swirl) Add sliced dill pickles over the top of the mustard. 

Next you will want to fill the other tortilla with a layer of Swiss cheese slices, then a layer of ham slices, another Swiss cheese layer and then the sliced cooked pork. 

The cheese is the glue that holds it all together. 

Once you have finished layering, gently place one tortilla over the other. 

Fire up a large griddle and cook until the outside is browned and the cheese is all melted together.

Mexican/ Cuban fusion quesadilla  is a perfect addition to any Taco Tuesday menu.  Maybe Wednesday’s too.

Ingredients
  1. Mojo Marinade
  2. 1/2 cup orange juice
  3. Juice of 1 lime
  4. 1 tsp cumin
  5. 1 tsp black pepper
  6. 1/2 tsp ground red pepper
  7. 1 tsp garlic powder
  8. 1 tsp dried onions
  9. 1 tsp salt
  10. 2 pork chops
  11. Quesadilla Layers
  12. 1/2 lb sliced ham
  13. Sliced cooked pork
  14. 8 slices of Swiss cheese
  15. Smear of mustard
  16. Sliced dill pickles to cover the quesadilla
Instructions
  1. Mix to together with pork chops in a pressure cooker.
  2. Process for 15 minutes on high pressure until pork is tender enough to slice.
Notes
  1. These same ingredients and process can be put on a thick hoagie bun. Grill sandwich.
