Do you celebrate Spring by loading the family into the car and driving to somewhere warm to have a picnic? I get Spring Fever BAD! I have to get out into the great out of doors and enjoy the warmth of the sun.  Classic Pulled Pork Sandwiches is a great sandwich for such an occasion.

One Easter we loaded the kids up in the jeep and headed to our favorite spot; Rochester Panel in Emery Utah.

Isn’t the panel beautiful? This is a photo of only one section of it. To view it all you have to hike to it. It is a small hike (about a mile) to one of the largest ancient art panels in the area. It is so worth the trip. If you come from further away there is a great driving tour with map available at the Castle Country Visitors Center in Price Utah.

Once we arrived the boys got out their new ball gloves and played catch in the parking lot. As they played we prepared our picnic on the tailgate of the jeep. No tables available, no worries. Spring picnics are usually prepared and served off the tailgate.

When we opened up the cooler I had accidentally left the ingredients for the Classic Pulled Pork Sandwiches in the microwave oven at home defrosting.  Opps!  I had intended to bring the supplies for a fabulous lunch. Now what do I put into the rolls for a sandwich? I looked around the jeep and decided I had all the makings for egg salad.  The kids had brought their Easter baskets loaded with boiled eggs.  I set to work peeling and chopping the eggs. Prepared the filling and placed it into the rolls like it was what I had intended to serve. Only one person balked at lunch so she ate a dill pickle sandwich.  We actually never missed the classic pulled pork sandwiches I had intended to serve for our lunch that warm Easter day. It was great day in the sun and helped my Spring Fever subside… a little
