Chicken Green Chile Tacos

Slow cooker chicken taco recipe.

Chicken green chile tacos are Taco Tuesday’s recipe pick for this week.  This is an easy recipe using only a few ingredients.  Throw it in a slow cooker and within a few hours you have a flavorful filling for taco dinner tonight. 

If you missed getting this into a slow cooker before you left for work and have a pressure cooker use that instead.  It will take seriously 7 minutes to cook the chicken.  Shred the chicken in a kitchen Aid mixer or Bosch mixer while it is still warm if you want to have it shredded.

The beauty of this recipe is.  If you have a small family like me it serves double duty. Tacos one night and burritos a few nights later.  Two dinners in one-is always a keeper in my book.

Chicken and green chiles are a perfect flavor combination and you will love this easy, easy recipe. Top a grilled white corn tortilla with fresh mango chunks, mango salsa, roasted red peppers. Can be served flat or folded. Either way they will be devoured.

Ingredients
  1. 12 oz chicken breasts
  2. 1/2 cup chicken stock
  3. 3 cans diced green chiles
  4. 1 tsp oregano
  5. 1 tsp garlic powder
  6. 1 tsp onion powder
  7. 1 tsp dried cilantro
  8. Squeeze of 1 lime
Instructions
  1. Place all ingredients in a slow cooker and cook for 4 hours until chicken is tender. Remove and place in grilled taco shells.
  2. Place 1 cup chicken stock and all ingredients except chilies in pressure cooker and process for 7 minutes. Cool naturally. Remove stock and add diced green chiles, stir until thick and combined.
Notes
  1. Top with mango salsa, cheese, diced tomatoes, diced mangos and roasted red peppers. Serve on grilled white corn tortillas.
