BLT PASTA SALAD RECIPE

BLT Pasta Salad Recipe screams “Hold the mayo!” No problem… there is none.  Traditional idea= amazing flavors. Bacon bits, Cherry Tomatoes, and Arugula are stars in this dish. Add in a dash of Feta Cheese and the traditional BLT has been flavorsized.

I know it is the end of Summer but I just can’t let it go.  Isn’t that what Indian Summer is all about?  Summer extension into September. It is always nice weather where I live so why not have one more family picnic. I am going to do just that. So adding this salad to the menu might be just what the family needs to end Summer right.

This is one of those dishes that brings out the best of the harvest. Gather your arugula and cherry tomatoes because they are headed for a pasta salad that is amped with flavor.

Pasta is one of those staple dishes that takes center stage in the pantry. So of course, it it used in many varieties. One of my favorite pasta brands is Barilla.  They have so many types and I love the portion controlled boxes. Plus they store really easily.

Bacon is one of those things I usually burn. It was a joke with my kids. When I cooked bacon the smoke detector usually woke them up, not the smell of bacon.  After years of working in a hotel I discovered a way  to make bacon without the burn.

Cooking Bacon Easy as 1, 2 3

1-On a baking sheet place a sheet of tin foil. Extend it up and over the edges to create a pan so the drippings stay on the foil.

2-Place raw bacon on top of the foil.

3-Bake at 350 degrees for about 20 minutes.

It always works for me.  Drain the cooked bacon on a paper towel lined plate.  Break the bacon into bits once it has cooled.

I hope you love this Summer Salad as much as I do.  We devour the entire bowl in one setting always.

Ingredients
  1. 1 lb cooked pasta, shells or macaroni
  2. 1/2 lb cooked bacon, cut into chunks
  3. 1 cup cherry tomatoes, cut in half
  4. 1/2 cup fresh arugula, cleaned and torn into bite sizes
  5. 1 tsp salt
  6. 1 tsp pepper
  7. 1 tsp Montreal Seasonings
  8. 2 tsp olive oil
  9. 1/2 cup feta cheese
Instructions
  1. Place cooked pasta, bacon, tomatoes, arugula and seasonings in a medium sized bowl. Toss with olive oil. Add feta cheese and toss together.
Notes
  1. Flavors enhance after being refrigerated for a few hours.
